Meet the Executive Chef at the Grand Beach Hotel Surfside

One of the best places to dine al fresco in Surfside is at The Grand Beach Hotel, where you can order a delectable meal overlooking the serene palm tree dotted beach. The chef behind the Restaurant at the Grand Beach Hotel is Chef Mickaël Marchand who has been with the property since it opened, about four and a half years ago. The restaurant offers a casual dining atmosphere in an indoor and outdoor setting that overlooks the ocean. It’s a perfect spot to fuel up for a day of sunbathing, sightseeing, shopping or take a lunch meeting while enjoying the ocean breeze.
Chef Marchand has years of experience working in some of South Beach’s best restaurants, but was attracted to Surfside for its family-friendly atmosphere. “If you’re looking for a nice place to spend family time, don’t search for any other place, you won’t find better,” he says. Marchand adds, “It’s like a village. It has everything you need.”
Becoming a chef came naturally to him, “I grew up in a family where cooking was a very special moment of joy and happiness. I remember always seeing my mother and grandmothers cooking with their heart.”
From seeing his family cook to developing his career, his philosophy about cooking is very much connected to his European roots and that style of cooking, “A great plate is a dish with quality ingredients, simply cooked, in a way that enhances it.” The dishes at the restaurant are a testament to this, showcasing a variety of fresh ingredients. Part of the menu is titled ‘simply grill’ and lists a variety of meat and fish that are exactly that, simply grilled to perfection with bit of sauce and side of something if you like it.
Marchand is from a western part of France that is surrounded by water, creating a natural affinity for cooking with fresh foods from the sea. “I grew up in Brittany, the biggest fish and seafood region in France, so I naturally enjoy cooking fish.” At the restaurant, the French-inspired menu offers a variety of seafood options that Marchand says are quite popular. “When you dine at the restaurant, with a full ocean view like we have, I think that influences people. Most of the guests love to order fish and seafood dishes.” 
The restaurant is open for breakfast, lunch and dinner and also handles room service for the hotel, keeping Marchand quite busy. When he’s not cooking, he dines out on French and Italian food in the neighborhood. And though the restaurant is at another hotel in Surfside, Marchand says he also enjoys the menu at Le Sirenuse.
